Our whitefish is SPECIAL! Fished out of the cold waters of Lake Michigan, the fillets we use for our whitefish salad are smoked in old smokers that give an old-world woodsy flavor. The meat is hand-picked to ensure a texture that is flaky and place beautifully with that smokey, clean freshwater flavor.
